End of Summer Salad


Leftover salmon, belgian endive, pecans, rocket lettuce, garden green beans, flat parsley and lovely light-blue borage flowers. My grandmother grew borage plants in the garden of my childhood memories. Come to discover now that the plant is used for regulating metabolism, its oil which is high in GLA ¬†helps “good levels” of cholesterol, and regulates cardiovascular, gastrointestinal and vascular disorders. Wisdom of the ancients!
